In Shadow Warrior, there were 3 options for skies. The first was the Duke Nukem sky (similar to your linear skies method), the second was Doom's method (stretching the sides), and the third actually stretched the vertical lines based on each column's facing - it actually properly moved with geometry when you turned around.
