Something to do with big/high colour PNG support? I noticed that removing the TITLEPIC allowed me to get as far as the start game menu and that editing HIRESTEX to define the sky panels as 256x256 rather than 512x512 allowed the level to start.

There was one function in the hires texture code that had an incorrect array index and read past the end of the allocated graphics buffer.

What should I do (or avoid doing) to steer clear of this problem until a fixed version is out? (It seems like keeping hires textures small probably does the trick.)

Don't use hires textures. Sorry, but the only thing that might help here is an update. Expect one tomorrow.
